a welcome home

Porcini and Finferli
Boletus Edulis & Cantharellus Cibarius

These are porcini and finferli mushrooms gathered in Sudtirol by Francesco (one of those kind neighbors of ours) Saturday morning and shared with us Saturday evening ... sure is good to be home.  Saturday night, when really all I wanted to do was take a shower and hit my bed, I meticulously brushed away the dirt and grass from each mushroom. "Don't clean them with water! Use a brush and an knife, and it's better if you do it tonight." I did exactly as instructed, using a pastry brush and paring knife. This evening Richard cut a few of the porcini and then sauteed them in olive oil and garlic. Once they cooked a bit, he tossed them with some spaghetti...and Voila!...a perfect dinner.

On a side note, Francesco, ironically, doesn't eat the mushrooms but finds great pleasure in their pursuit.  I think he also found pleasure in our delight with his generous gift! A win-win, no?

  4. Gorgeous picture! I love chantrelles but have never tried a fresh porcini. they look amazing!
